Summer Cocktail Club

BBQ’s and garden parties – summer is nearly here which means fruity summery cocktails are on the agenda. This week we’ve got 5 easy yet tasteful recipes for you to choose from. Spice things up this Summer and impress your guests – cocktail shakers at the ready, Summer 2021 here we come! 

Tequila Sunrise- Serves 4

8 tsp grenadine
ice, to serve
200ml tequila
4 tbsp triple sec
4 large oranges juiced
2 lemons, juiced
4 cocktail cherrys 

Pour the grenadine between 4 tall glasses and set aside. Fill a cocktail shaker with ice and add the tequila, triple sec and fruit juices. Shake until the outside of the shaker feels cold. Add ice to the serving glass then strain the cocktail into it, trying not to disturb the grenadine layer too much. Add more ice if needed to fill the glass then garnish with a cherry on a stick or cocktail umbrella.

Mango & Pineapple Mojito – Serves 6 

50g pineapple pieces
50g chopped mango
3 limes , chopped
2 tbsp light brown soft sugar
2 mint sprigs , leaves picked
ice, to serve
150ml white rum
200ml pineapple rum
600ml sparkling water

Tip the pineapple, mango, limes and sugar into a large jug and mix together. Add the mint leaves, then top with ice. Stir in the white rum, pineapple rum and sparkling water.

Passion Fruit Martini- Serves 4 

4 ripe passion fruits halved
240ml vanilla vodka
120ml passoa
4 tbsp lime juice
4 tbsp sugar syrup
prosecco , to serve

Scoop the seeds from 2 of the passion fruits into a cocktail shaker, add vodka, passoa, lime juice and sugar syrup. Then add a handful of ice and shake well. Strain into 4 martini glasses, top up with prosecco, then add half a passion fruit to each. Serve immediately.

Strawberry Mojito – Serves 6 

9-10 strawberries
2 limes , chopped
2 tbsp granulated sugar
2 mint sprigs , leaves picked
ice, to serve
350ml white rum
600ml sparkling water

Add the strawberries, limes and sugar in a large jug. Crush the mint leaves and add to the jug with a pinch of black pepper. Add lots of ice and stir in the rum and sparkling water.

Woo Woo – Serves 4 

200ml vodka
100ml peach schnapps
400ml cranberry juice
few drops fresh lime juice
ice, to serve
4 wedges of lime

Fill a cocktail shaker with ice then add the vodka, peach schnapps, cranberry juice and a few drops of lime juice. Shake really well then strain into 4 tumblers with extra ice. Garnish with a wedge of lime.
